Braised Collard Greens

Like I mentioned a few weeks ago. I’m trying a low carb diet, I guess this isn’t trying anymore, seeing as its been 5 weeks, I’m obviously doing this, and by doing this I mean meal prepping weekly, thinking up interesting low carb ideas for my weekly meals.

This week I decided on going southern with my vegetables, collard greens are a southern stable, but let’s be real here, I’m not southern, and I made these my way, following southern steps but introducing Nigerian principles for braising vegetables, like for example braising it in some blended pepper/tomatoes.

Key to making the best collard greens are cooking them for a long time, the longer the better, collard greens are a very tough leathery vegetable, so they need to cook for longer than most vegetables in more liquid to be tender, the softer they are, the more delicious, melt in your mouth.
